I think it’s time we take the asparagus out of the frying pan and put them into an air fryer. This recipe is perfect if you’re trying to cut back on cooking oil or if you want to make a healthier side dish for dinner tonight! It also has only 3 ingredients, which makes this recipe even easier than most other side dishes!

I hated asparagus when I was a child. I remember my mother would force me to eat it, telling me that she loved eating it and that someday I would too. But the taste never changed for her, so why should it change for me?

Fast forward to now: As an adult, I have grown to love roasted asparagus! In fact, if you were to ask my friends what they think is my favorite vegetable, most of them would say “asparagus.”

So what happened?

Well one day at the grocery store while trying to figure out a side dish for dinner, I saw asparagus on sale for $0.99. It immediately brought back the days of steamed, bland asparagus. The store was out of my go-to vegetable dish, Brussel sprouts, but I began to wonder … could I roast asparagus like I do with Brussel sprouts? How will that turn out?

I grabbed a bunch, tossed them in oil and roasted in them in the oven. It was delicious! When I got the air fryer, I decided to give air fryer roasted asparagus a try and I was impressed. In a fraction of the time, I had perfectly roasted asparagus.

Why asparagus?

Asparagus is a food I had previously never cared for. I grew up with my mom always overcooking it, and the only way to eat it was by hiding it under other foods on your plate. But now that I have an air fryer, my life has changed! Roasting asparagus in the air fryer not only makes them crispy and delicious but also healthy!

A recent study found that people who eat more than two servings of vegetables per day have a reduced risk of chronic diseases like heart disease and type II diabetes. Asparagus are one of the best vegetables to include in your diet because they’re so low calorie (only 20 calories per spear), high fiber, full of vitamins and minerals, and provide some protein too.

Asparagus is a great side dish to make using the air fryer because it comes out perfectly roasted but in much less time than roasting in the oven. It’s also a great way to get those two servings of fruits and veggies per day by adding it as a side dish with your lunch or dinner.

The air fryer is an excellent tool for cooking without oil because you can cook at very high temperatures (400°F-450°F) which cooks food twice as fast (and saves time). The other upside to using the air fryer, besides saving on calories, is because some fats and oils are not good for our bodies. Also you’ll save time and cleanup versus cooking in the oven – you’ll have one less dish to clean! Roasted Asparagus tastes delicious too so I don’t miss all of those unhealthy fats.

The taste is amazing too – some people might call them “crunchy” as they’re roasted without any oil added to make them extra crispy on the outside but juicy on the inside. This tastes delicious yet healthy for those who are looking for ways to fit more vegetables into their diet or simply want something flavorful – whether its lunchtime or dinnertime.

Ingredients
  

  • 1 bunch asparagus
  • 1 tbsp olive oil
  • 1 pinch salt

Instructions
 

  • Pre-heat the air fryer to 400 degrees.
  • Cut off the lower ¼ of the asparagus. It's not the most pleasant thing to eat.
  • Toss the asparagus in the olive oil. Sprinkle on salt.
  • Place the asparagus in a single layer in the air fryer basket.
  • Cook 5-10 minutes until browned.
